I'm looking for an affordable 7.1 or 5.1 USB audio interface that play's well with a Raspberry Pi and also has stereo mic input which supplies plug-in-power.

I assume that you are thinking of one of the cheap 7:1 dongles (and that you have a hi-fi dolby decoder already?)........?
Otherwise, 8 analogue outputs will always be expensive ($600 minimum).
There are professional units like the motu 828mk3 which would give you what you want, and that might work, but you would need to scour the rpi forums to be certain.
You could use "jack" and make an aggregate device (I am NOT certain about that... but it is likely).
Then you could use one of the $4 dongles and address that and a stereo mic input through jack (maybe). Even two mic inputs is not easy. If you find something without phantom power you could hook up a 9volt battery with resistors externally to power the microphone.
Often the pi seems like a good choice, when in fact for most purposes a second-hand windows laptop is cheaper (even with a working screen) and more useful.......... plus you can dual boot to Linux if you wish.....

Why would 2 mic inputs not be easy? Lack of processing power?
To be clear,
I just need plugin-in-power like it's supplied by laptop or camera mic-inputs to power a small stereo lavalier microphone.
Good idea with the laptop, but I would definitely need something fanless.

@random_pulse Hello again...... sorry, I meant that there is probably not such a wide selection of stereo microphone usb dongles available. The 7:1 dongles are very common.
The first thing to find out is whether jack can build an aggregate device in one of the Raspberry os versions, and then trawl the forums to find out which dongles could work.
You might be able to aggregate the devices in Pd, but that reduces the chances of them working properly together....... Pd is quite fussy about it's audio being absolutely problem free........
