The appropriate forum for this question is actually the 'pixel#' one, but I'll answer to the things I know.
For choosing another camera you have to send [dialog( to [pix_video], but from what I remember you have to start rendering first, then destroy the gem window and go through this procedure to choose your camera.
For triggering bangs from external sounds, if it's quite percussive (like hand claps) you'll need [bonk~], for pitch you can use [fiddle~].
About your third question I don't know, but there must be some easy way to display the pictures live, I guess. Refer to the appropriate forum for that, also always check help patches of objects you're using, it's quite likely you'll find things you didn't expect.
