i'd like to but never used gem! sorry......

seems not, that i could understand it "on the fly", i thought it might have something to do with the settings for Z in the [translateXYZ] object. but it doesn't seem like that.
just to be sure: your problem is, that you can't see the text on the sphere with [text3d] or [textoutline]?

I have no idea how to do this in Gem, so this might not be helpful, but could you maybe write text on a texture and map the texture on the sphere?

Edit: maybe something like in examples -> Gem -> 07.textures -> 01.texture.pd? If the text doesn't change at all, you could just make an image file with text on it in an image editor and just cop that help patch, changing the [cube] to [sphere] of course.
