Recording can be done with the [writesf~] object (works fine here to record 5 simultaneous stereo tracks)...
I'm not sure, but i believe there's something called soundflower to route audio between apps...

jack works fine under linux (also with macs), but for mac users the best choice is cycling74's soundflower (it's free)
