I've seen some awesome stuff using data structures, but there's a high learning curve (I feel) to that.
There's GriPD http://crca.ucsd.edu/~jsarlo/gripd/ but it's quite old and no longer maintained AFAIK
I'm actually planning on using Processing as a front-end and communicating over OSC. Processing has a GUI library controlP5 http://www.sojamo.de/libraries/controlP5/#examples - and I believe the graphics are customizable.
Provided that you get into using OSC as your data passing format, you really are open you using whatever scripting language/gui toolkit you are comfortable with.
